These perfect grain-free, dairy-free AIP Oatmeal Raisin Cookies (which are made without oats!) were inspired by my long-term health journey. Several months after the birth of my son, my anxiety and depression hit me full force, and I began connecting my panic attacks to certain foods. Fast forward three years, and I’m still baking for my brain using the Autoimmune Protocol! I’ve eliminated almost everything from my diet (grains, dairy, nuts, seeds, nightshades), yet I can still make a great cookie that is nourishing and satisfying.
These delicious cookies are made using Tigernut flour (ground from a tuber) and coconut butter (manna/cream concentrate). I prefer Organic Gemini’s Tigernut Flour and a high quality organic coconut butter for this recipe. You can substitute some of the items in this recipe (manna for butter/ghee), but you definitely need the Tigernut Flour for this to turn out like an oatmeal raisin cookie.
