Chocolate Zucchini Donut Recipe

As summer ends and fall begins I, along with many other gardeners, always seem to find myself with a bit of a problem.
It’s not the impeding cold temperatures or the need to prepare for the first frost… at least not yet. It’s not pests or disease… at least not this year.
It’s bumper crops and it happens every year.
A bumper crop is defined as when there is insufficient storage space for for an overly large crop.
So really, of problems to have, it’s not the worst one. But, with vegetables pouring in and only so much time to preserve or consume them before they are past their peak of freshness, one has to get a little creative.
Fortunately, creativity struck as I stared at the mountain of zucchini on my counter top! Basic chocolate donuts became super moist thanks to shredded zucchini.
