Quick, Tasty Homemade “Almond Joy” Candy Bites

How does inspiration for a new recipe come to you? Here’s a story of inspiration coming to me.

So, just yesterday I found an UhMaaaZing recipe. This recipe is right up my alley…Chocolate Coconut Butter Bites (recipe HERE), from Meghan at Whole Natural Life (Facebook HERE). I just had to make them…and you should, too!!! Wow. These are super tasty and very healthy treats, they were really easy, and I like the fact that they are stable (no melting) as an on-the-go treat.

So, I went to bed, my belly happily filled with Meghan’s treats…and started thinking about how easy they were to make, yet so tasty. Then, I started thinking about my Homemade “Chocolate” Chips. Then, I started to wonder if I could sort-of combine the two recipes. (Do you ever do this…talk so much to yourself about food that you can’t go to sleep?) Well, what do you think happened next?

Yup…I was up out of bed and trying a new recipe!

Quick, Tasty “Almond Joy” Bites
Ingredients:

Double-Boiler
  • Facebook

Combine everything together in a double-boiler. I don’t really have a double-boiler, I just make one with a glass bowl and pot of water (just a couple of inches). I just lift it up every so often to make sure that it won’t blow up. ;)Once everything is melted, pour into ice cube trays (or candy molds, if you have them).Pop into the freezer for 30 minutes.Eat. Share. Try not to eat them all.

Delicious crumbled over coconut ice cream!

My husband actually named these this morning. I’ve never had an Almond Joy candy bar, but he said they taste similar, with mine being better. Aww, thanks honey! Even though I’ve never had an Almond Joy candy bar, I’m guessing it has some pretty awful ingredients inside. Not these!

And, thanks again to Meghan at Whole Natural Life for giving me inspiration to create these! My Homemade “Chocolate” Chips alone never would have inspired me to create these, but by finding a recipe for a delicious travelling treat and combining it with one of my own recipes, I now have something new. Yay for *real* food foodies sharing and learning together!

      So funny…I was the exact same way! I always told people that I didn’t like coconut, but then I had *real* coconut and loved it. Too funny!

    1. Haha! I wish I had a fancy answer for you, but I don’t. I just melted everything down and poured them mix into the ice cube tray. There were a few chunks of coconut toward the end of the pour and I just dispersed them evenly throughout the ice cube molds. Easy peasy!

    1. But maple syrup is sugar. *I* like that there’s not a huge amount of it.

      If you use almond butter instead of peanut butter here, it’d actually be Paleo.
