Poor (Wo)man’s Cabbage Soup

Alrighty, friends. No fluff in this post…let’s get right to it.

This is an unbelievably nourishing and tasty soup that is also very kind to your pocketbook, too. With just a few simple ingredients and a crock pot, you’ll be eating a lovely soup to warm and nourish your soul.

Poor (Wo)man’s Cabbage Soup

Ingredients:

  • 1 head of cabbage
  • 1 medium to large onion
  • 1+ C homemade chicken stock
  • 1 pkg bratwurst (4-5 of your favorite locally raised brats or a trusted brand w/no antibiotics or hormones raised on pasture)
  • Garlic (fresh or 1t garlic like this, or more if you really like garlic)
  • Sea salt & white pepper, to taste

Make It:

  • Coarsely chop your washed cabbage
  • Slice your onion
  • Place onions in bottom of crock pot
  • Put cabbage on top
  • Add seasonings
  • Pour chicken stock over top (enough to cover everything halfway)
  • Place bratwurst on top of everything (no, the liquid does not have to cover them)
  • Cook on high for about 3 hours
  • Remove brats, slice, then add back into your slow cooker
  • Enjoy your cheap and nourishing meal!

Seriously, this is a frugal and delicious meal that will serve your family a few times for a few days.

Also, feel free to get creative! Add in any other spices that you love, possibly some carrots…yummo!

  3. I am away at school right now and I’d like to try to make this soup, however I don’t have a crockpot. Do you have any recommendations for changing the recipe or cook times to just being on the stove top?

    1. Kayley, what I would do is put everything in a pot on the stove, bring it to a boil and then cover + simmer until the veggies are tender. You might need to add more broth/water doing it this way. Enjoy!

        I’m as well as can be expected all things considered. I took this opportunity to leave my house for the very first time since March 14 to go to the grocery store to get the cabbage and carrots. I had everything else.
        Yesterday and today were the first “senior mornings” at my local Publix Grocery Store (from 7-8 am) to allow those of us over 65 to come into a freshly stocked and cleaned store before everyone else. This store is only doing it on Tuesdays and Wednesdays. I didn’t go on Tuesday because we had a terrible thunderstorm starting around 6 am. It didn’t stop raining until late in the afternoon. So I waited until today. The weather cooperated and I got my cabbage!
        I made the soup today with a couple of tweaks. I had some mushrooms that HAD to be cooked, so I cooked them first, then added the onions (wish I’d had shallots instead… but beggars can’t be choosers!) and garlic. After about five minutes, I added some carrots that also HAD to be cooked. Then I chopped up the cabbage and threw it on top with water to cover. I cooked it on the stove in a large covered wok, which I use for most of my meals. Once it began to boil, I added a bag of ground Quorn. (I’m vegetarian so chicken isn’t one of the things I have in my freezer.) I turned the burner down to medium, put on the glass lid and walked away. It was impossible to forget it was on the stove cooking because the entire house filled up with the smells of cabbage soup!
        Once when I walked by, I raised the lid and sprinkled some nutmeg on the top before covering it back up. During the next 45 minutes, I came over and stirred it a couple of times. At the end, right before serving it up, I added about 1/2 a teaspoon of apple cider vinegar (with the Mother) and stirred it again. Perfect. Well, it did need a little more salt. I’m just sorry the weather isn’t colder. Hot soup when the weather is cold is always great! I just enjoyed a mug.
        I’ll have more tomorrow. I’ll have to find a way to freeze some of it for later too. Thank you so much for the perfect recipe for the situation! Turned out great!!

          Haha! Yes, shallots would have been lovely, but you are right…in these times “beggars can’t be choosers.” I think that your variation sounds amazing! I love mushrooms, so I know I would enjoy them in this soup. I also absolutely LOVE that you included ACV *and* the nutmeg sounds so amazing. I can almost smell it! I’m so happy that you are enjoying it. It should freeze very well for you, too.
